Brown Rice and Veggie Salad with Chickpeas and Walnuts

Ingredients:

  • 1 cup uncooked brown rice
  • 2 cups water
  • 1 ripe avocado, pitted, peeled, and diced
  • 1 bell pepper (any colour), seeded and chopped
  • 1 large ripe tomato, chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 cup shredded red cabbage
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 4 cups fresh lettuce, washed and chopped (any variety)
  • 1/4 cup chopped walnuts

For the dressing:

  • 1/4 cup olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Rinse the brown rice under cold water. In a medium saucepan, combine the rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and all the water has been absorbed. Remove from heat and let it cool.
  2. In a large salad bowl, combine the cooked and cooled brown rice, diced avocado, chopped bell pepper, tomato, cucumber, shredded red cabbage, chickpeas, and fresh lettuce.
  3. To make the dressing, whisk together the olive oil, lemon juice, apple cider vinegar, minced garlic, salt, and pepper in a small bowl. Taste and adjust the seasoning as needed.
  4. Drizzle the dressing over the salad and toss gently to combine. Top the salad with chopped walnuts and serve immediately.
