Grilled Chicken and Fresh Vegetable Salad

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 4 cups mixed lettuce and spinach, washed and dried
  • 1 large ripe tomato, chopped
  • 1 ripe avocado, pitted, peeled, and sliced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro or parsley (optional)

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill or grill pan to medium-high heat. Season the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
  2. Grill the chicken for 5-7 minutes per side, or until it’s fully cooked and has an internal temperature of 165°F (75°C). Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  3. In a large salad bowl, combine the mixed lettuce and spinach, chopped tomato, avocado slices, red onion, and fresh cilantro or parsley (if using).
  4. To make the dressing, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl. Taste and adjust the seasoning as needed.
  5. Drizzle the dressing over the salad and toss gently to combine. Top the salad with the grilled chicken strips and serve immediately.
